This particular model is unique, because of its feature of working the ingredients in Sous-Vide condition. It can cook up to 190°C with a temperature setting going from degree to degree. The ‘Master’ Model can face any preparation or recipe. Its Sous-Vide functionality plus all its former features pave the way to many unique tastes and possibilities: Cooking and Cutting in Sous-Vide condition will lower the boiling temperature, thus allowing food to keep its natural color and flavour. This is very nice for sauces and creams. The machine will also work the ingredients with no oxygen presence, this means no oxydation and no weight loss. Suppose you have to make a Vinegar Reduction: doing this in a Sous-Vide environment, it will have full taste, plus the color will be more intense. Save a recipe or preparation, anybody can start it and create the same result as yours simply using the same ingredients and quantities. No-one will ever notice the difference.
