The Besser Vacuum inclined plane for vacuum is a very useful accessory: it prevents liquids or humidity from being sucked in by the oil bath pump that mounts the professional vacuum machine. Vacuum packaging machines can also have, in the top ranges, special marinating functions or for liquids, which vacuum in small bursts. This increases the possibility that the oil inside the pump does not accumulate water and the vacuum works well by sucking in the air, without blocking. Having the inclined surface in a vacuum sealer is also useful just for packaging pieces of meat that may have stagnant liquids. If you don't use a bag high enough, the water ends up in the pump and is ruined. The vacuum sealing, therefore, will last less. By tilting the bag, the possibility of food liquids being sucked up by the pump decreases drastically.
